Cashew sauce, three ways

On Oct. 24 I gave a culinary presentation at The National Women’s Show, during which I showed an engaged and enthusiastic audience how to make three kinds of sauces from cashews.  Everyone seemed quite surprised and pleased by how easy they are to make!


I promised people the recipes, so here they are!

Cashew Base

  • Two cups raw cashews – It’s important that they’re raw, not roasted/salted, soaked in
  • Water

Start with soaking them. Put in a bowl, and add water until they’re just covered. Soak for at least half an hour, but up to overnight. If you do not have a high powered blender (like a Blendtec or a Vitamix) overnight will be necessary. The water will make them soften and swell.

Drain the water, rinse and put the cashews into the blender. Add about half a cup cup of water for every cup of cashews. It’s better to err on the side of less , and add more to thin it later if desired.

Once you’ve done that, blend.  A high powered blender really works better, but a regular blender can produce edible results, especially if you’re aggressive with your blending.

To make a sweet cashew cream

Add to BASE recipe, and blend thoroughly:

  • 1 tsp. vanilla extract
  • 1 TB agave nectar (more or less, depending on taste)
  • 1 tsp. cinnamon OR four ounces of melted dark chocolate (to make a chocolate sauce)
  • 1 tsp. lemon juice
  • Water (depending on desired consistency)

Use as a drizzle or accompaniment to fruit, pie, cake, etc.


To make basic cheez sauce

Add to BASE recipe, and blend thoroughly:

  • 1 cup nutritional yeast
  • 2 TB white miso paste (more or less, depending on taste)
  • 1 tsp each garlic and onion powder
  • 1 TB lemon juice
  • Water (depending on desired consistency)

Serve as a pasta sauce, mac and cheez sauce, on pizza, on steamed veggies, as coating for kale chips (use less water), or whatever other way you’d use cheez sauce! Will keep in the fridge for about four days.

To make nacho cheez sauce

  • Take the basic cheez sauce recipe
  • Stir in half to one small jar of chunky salsa.

Serve on tortilla chips, or any other way that you would normally use a nacho cheez sauce!
